Apple-Cinnamon Beet Greens

1lb Beet Greens (2 to 3 Bunches)

3Tbs. Chopped walnuts

1 Tbls. Extra virgin olive oil

1 Onion sliced into thin half moons

1 Golden Delicious Apple, peeled, cored and sliced ¼” thick

¼ tsp Cinnamon                                                                                         

¼ tsp Nutmeg

Salt to Taste

2 to 3 tbls. Water

DIRECTIONS

  •  Separate the greens from the stalks by chopping off the leaves and discarding the long stems.  Wash green wells and cut into strips about ½” wide and set aside
  • Toast walnuts by spreading them in a baking dish and placing them in a 375 degree oven/toaster for 5 to 7 minutes.  Set aside
  • In a large skillet with lid, heat the oil over medium heat.  Add onion and sauté until soft and golden, 7 to 10 minutes, adjusting heat to avoid burning
  • Add beet greens, apple slices, cinnamon, nutmeg, a pinch of salt and 2 to 3 tbls of water.  Mix thoroughly, cover and cook over medium-low heat for 8 to 10 minutes, stirring occasionally.  Serve hot, garnish with toasted walnuts.
